Queso

If Texas doesn't already have an official food, it should be queso. We eat it on everything and for every occasion. A certain burrito food chain is selling a fancy version but we don't do that here. This is the original type of queso made with Velveeta and Rotel tomatoes, as God and Willie Nelson intended.

1 16-oz box of Velveeta cheese

2 cans of original Rotel tomatoes

Cut the cheese into 1" cubes and place in a slow cooker. Pour both cans of Rotel over the cheese. Cover and heat on high until the mixture is melted together, stirring every so often. After the mixture has melted together into spicy cheesy goodness, turn slow cooker to low and serve with chips.
